South of Thailand

Massaman curry is a rich, flavorful, and mildly spicy Thai curry that is particularly popular in the south of Thailand. It is a fusion dish, combining ingredients from three sources: Persia, the Indian Subcontinent, and the Malay Archipelago. South of Thailand is typically made with a curry paste that includes spices such as cardamom, cinnamon, cloves, star anise, cumin, bay leaves, nutmeg, and mace. Other common ingredients in massaman curry include coconut milk, potatoes, onions, peanuts, and meat of choice (usually chicken, beef, or lamb).
